Elissa
Elissa took a chance on us when she joined our team in 2019 at just 19 years old, and we couldn't be more grateful to have her on this journey. Over the years, we've watched her grow, consistently impressed by her ability to pivot, her innovative brainstorming, strong work ethic, and collaborative spirit. We’ve grown together, and we’re excited to see what the future holds for both her and our team.
Arely
Arely joined The Merchant in 2021 as a baker's apprentice, quickly proving her dedication, strong work ethic and her unwavering commitment to her coworkers. Her ability to adapt and excel made her an invaluable member of our team, and we couldn’t be happier to have her with us.
Alex
Alex joined our team in 2023, bringing his culinary school training to life with skill and passion. His exceptional attention to detail and unwavering willingness to step in whenever needed have made him an invaluable addition. He’s the missing piece we didn’t realize we needed.
Jordana
Jordana became part of our team in 2022 as a baker's apprentice. While her baking experience was initially limited, she quickly proved herself through hard work, creativity, and a constant flow of innovative ideas. Her sharp memory, loyalty, and determination make her an invaluable member of our team.
Our Bakery
Our journey has been anything but ordinary. Through every step, we've focused on staying true to our values. Our humble beginnings started right in the same café where you now buy your coffee and pastries.
Every evening, after the baristas closed for the day, the carts would roll out, and the coffee shop would transform into a bakery. Imagine the smell of cinnamon rolls, chocolate chip muffins, and freshly scones wafting through the early morning hours. We worked against a ticking clock, frosting rolls, cutting banana bread into perfect triangles, and pulling hot muffins from the oven. It was pure magic.
Just as the sun rose, the bakers would tidy up, leaving the shop spotless for opening time, without a trace of our overnight work. We have since moved to our own bakery, and now our baked goods are delivered. We've always pivoted and made changes, and having a team that is down for the ride makes it all fun.
