For over 9 years, The Merchant has been a Long Beach neighborhood staple known for some of the most mouthwatering pastries around. Behind every one of those pastries is a team that cares deeply about the craft. We're growing our bakery team and we need someone who is ready to roll up their sleeves, learn fast, and bring real energy to every shift.

What you’ll be doing

No two nights are exactly the same, but here's what you can expect:

  • Assisting the bakers in preparing and producing our full pastry menu

  • Following recipes with precision and consistency - every product represents The Merchant

  • Learning the craft hands on and growing your skills shift by shift

  • Keeping the bakery spotless, organized, and food-safe at all times - if you see it, you clean it

  • Managing your time and tasks with urgency - pastries have to be ready on time, every time

  • Working evening into early morning shifts at our offsite bakery location in Long Beach

  • Consolidating finished products as they come out of the oven in a timely manner - organizing, sorting, and preparing items with care and efficiency

  • Packaging and boxing pastries for delivery to The Merchant in a timely manner - every box that leaves this kitchen represents our standard and our name

  • You have some baking experience and a genuine passion for the craft - or the hunger to develop it

  • You move with urgency. You understand that in a bakery, time is not flexible and neither is the oven

  • You are efficient - no wasted motion, no dragging your feet, no waiting to be told twice

  • You know our pastry menu inside and out and take pride in the product you put out

  • You are reliable - evening into early morning shifts are a commitment and your team is counting on you

  • You see a mess, you clean it. No excuses, no leaving it for someone else

  • When something goes wrong, you fix it - you don't complain about it

  • You take direction well, absorb feedback, and genuinely want to grow under the head baker

  • You're hardworking, focused, and the kind of teammate people are glad to be in the kitchen with

This is a role with evening into early morning shifts. We need someone who shows up every time, moves with purpose every time, and brings their best every time.
