For over 9 years, The Merchant has been a Long Beach neighborhood staple known for some of the most mouthwatering pastries around. Behind every one of those pastries is a team that takes the craft seriously. We're growing and we need an experienced baker who can hit the ground running with minimal direction and maximum output.

What You'll Be Doing

You know the drill. Here's what a shift looks like:

  • Independently executing our pastry menu from start to finish with precision and consistency

  • Mixing quickbreads, doughs, following and converting recipes to larger or lesser amounts as needed

  • Prepping and filling throughout the shift - staying ahead of what's needed so nothing falls behind

  • Operating commercial kitchen equipment confidently - you've done this before and it shows

  • Using scales and measuring in metric with accuracy - no guessing, no approximating

  • Managing your time and tasks with urgency - you know what needs to come out of the oven and when

  • Consolidating finished products as they come out of the oven in a timely manner - organizing, sorting, and preparing items with care and efficiency

  • Packaging and boxing pastries for delivery to The Merchant shop in a timely manner - every box that leaves this kitchen represents our standard and our name

  • Keeping the bakery spotless, organized, and food-safe at all times - if you see it, you clean it

  • Working evening into early morning shifts at our offsite bakery location in Long Beach

You're Our Kind of Person If...

  • You have at least 1 year of experience working in a commercial kitchen or bakery - you understand the pace, the pressure, and the standards

  • You communicate clearly and proactively - if something is running low, behind, or needs attention, you speak up. Your team should never have to guess where things stand

  • You are confident working with commercial equipment and don't need to be taught the basics

  • You know how to use scales and measure in metric - accurately and consistently every time

  • You can read a recipe, scale it up or down, and execute it without hand holding

  • You move with urgency - time management in a commercial kitchen is not new to you

  • You are eager to know our pastry menu inside and out and take pride in the product you put out

  • You are reliable - evening into early morning shifts are a commitment and your team is counting on you

  • You see a mess, you clean it. No excuses, no leaving it for someone else

  • When something goes wrong, you fix it - you don't complain about it

  • You're hardworking, focused, and the kind of baker people are glad to be in the kitchen with

One Honest Note

This role , whether part-time or full-time , requires someone who walks in ready to work. We will show you our kitchen layout, mixing techniques, and how we do things here . That's mostly it. Everything else you already need to know. If you are looking for a role where you will be trained from scratch, this is not it. But if you are an experienced baker who wants to put their skills to work in a kitchen that takes quality seriously?
